It’s summertime, so we all love a nice refreshing salad.
This is my favorite Greek salad recipe. It’s an easy one to make!
3 tomatoes, cut in wedges
1 cucumber, sliced
1 onion, sliced
1/4 cup minced flat-leaf parsley
6 tbs. olive oil
2 tbs. wine vinegar
salt and pepper to taste
1/2 pound feta cheese, cut into small chunks
1/2 tsp. torn fresh oregano leaves
12 kalamata olives
Place tomatoes, cucumbers, onion, and parsley in large salad bowl.
Combine olive oil, vinegar, salt, and pepper. Pour over salad.
Sprinkle feta and olives over salad. Add oregano and toss.
Another delicious type of Greek salad is the watermelon and feta cheese salad.
- Per serving:
- 3/4 – 1 cup of cold watermelon, cubed
- 1/4 cup of feta cheese, crumbled or cubed
- 1/4 teaspoon of balsamic vinegar or balsamic vinaigrette
Place the watermelon in a bowl, top with most of the onions, then the feta cheese.
Place remaining onions on top. Sprinkle with balsamic vinegar, and serve.
This recipe can be made in individual servings or multiplied and served in a large salad bowl.
